He also worked at the One & Only Cape Town under Gordon Ramsay and led Mont Marie Restaurant as Head Chef for nearly three years before relocating to the Isle of Man.
Willem’s culinary style is rooted in global influences, particularly French and Asian, and he is passionate about using seasonal and locally sourced ingredients to craft both elevated dishes and comforting classics.
